Paximadakia with taramosalata dip

2 spoonfuls white tarama

(cod roe)

1 cup stale bread

1 small grated onion

(optional)

juice of 1 lemon

½ cup olive oil

 

 

 

 

Soak bread in water and squeeze to get rid of excess water. Place cod roe and a little lemon juice in the blender and stir for a few minutes. Add bread and onion and stir a little longer. Slowly and alternatively pour olive oil and lemon juice in the blender and continue stirring until taramosalata becomes soft and creamy.
