"In regions that produce barley in abundance, bread is made with mixed flour, composed of wheat and barley. There is a wide scale consumption of paximadi made with mixed flour.” This extract comes from a study that was realized in Crete from 1948 to 1957, a period when the traditional Cretan diet hadn’t been influenced by foreign factors. During this same period Dr. Ancel Keys started a wide scale study which involved people from many countries around the world. It was the renowned “Study of the Seven Countries.’’ Among the examined areas was Crete. The results were amazing and many times confirmed by later studies and even by the World Health Organization. The healthiest people in the world lived in Crete! Heart problems were almost unheard of and cancers were rare. The reasons of course were not genetic and this amazing discovery was attributed to the Cretan diet. A lot of olive oil, vegetables, fruit, legumes and bread, mainly paximadi, were consumed by the Cretans on a daily basis. Today’s society has turned to healthier models. In such a society Crete can offer her experience, her products, her people’s lifestyle and her nutritional culture. Paximadi is one of the big secrets: made with natural ingredients it offers the richness of cereals and the innumerable plant fibers that are necessary for the proper function of the intestines. The vitamins mainly those of the B group which can be found in Cretan paximadi are necessary for the good operation of the nervous system. In addition, it is a good source of vitamin E and minerals (e.g. magnesium). |
