Salad with potatoes, eggs and paximadi

TEAM OF CRETAN PAXIMADI PRODUCERS

1-2 rusks (paximadi)

2 potatoes, 4 eggs

1-2 tomatoes in slices, 1 onion in slices

2 spoonfuls of chopped parsley

5-6 olives, 1 cup of purslane

1 cucumber in slices

salt, pepper

6 spoonfuls olive oil

2 spoonfuls vinegar

 

Rinse the potatoes and boil them (without removing the skin). Boil the eggs. Break paximadi in bite-size pieces and place them in a salad bowl. Peel the potatoes and the eggs, cut them in slices and put them in the salad bowl. Add tomatoes, onion, cucumber, purslane, parsley and the olives. Beat salt and pepper with olive oil and vinegar and pour the sauce over the salad. Mix well.
